Solin Family Sugarbush

The Tappening is an outdoor event celebrating spring and maple syrup in our sugarbush north of Antigo. It’s going to be an amazing and inspiring evening, and we’re excited to have you join us. We're honored to be working with an all-star team to create The Tappening. The event will feature a tour of our maple syrup operation, a 3-course meal by Stacked Farm + Food, cocktails by Copper & Pines featuring Northern Oasis Spirits, beer by Cocoon Brewing, music by Sarah Crow, bonfire, and maple syrup cooking - all set in the Solin Family Sugarbush.  Thanks to Quiet Creative Design for the design of all of our materials!

Agenda:
2:30 - 4:00 Tour of our maple syrup operation and sugarbush
4:00 - 5:00 Social hour in the sugarbush - appetizer, beverages, and music
5:00 - 7:00 Dinner - opener, entree, and dessert with cocktails and beer
7:00 - ? Bonfire, beverages, and maple syrup making

The Tappening Menu*

Appetizer: Homemade ‘lil smokies to cook in boiling sap with hen of the woods mushroom ketchup, ramp mustard, housemade kraut condiments

First course: Tappers' Soup - Oxtail and infused maple syrup broth with root cellar vegetables and dumplings with preserved lemon and thyme

Second course: Whole hog sap-braised porchetta stuffed with maple sweetened sausage and herbs, and bread and greens salad served with maple mustard sauce and maple hot sauce

Third course: Whiskey hickory nut pudding with whiskey barrel-aged maple syrup sauce

*this is a set menu designed by the chef to feature seasonably, locally available foods. Vegetarian options are not available due to increased time and price in preparing additional items. Primary menu items come from Stack Farm & Food farm (pork, vegetables, greens, herbs, kraut), the Solin family sugarbush (maple syrup, sap), or are foraged (hickory nuts, hen of the woods mushrooms). It's possible that adjustments to the final menu will be made based on availability of ingredients.
